Our Story

S&V was founded in 2018 and started on Lancaster Street in Kitchener by Jill & Mica Sadler. Starting out with a focus on charcuterie and tapas style dishes with a creative cocktail program and dedication to exceptional guest experience. In 2020 the pandemic required many pivots & changes to the restaurant's concept. This aided in taking the culinary program to another level of excellence with a renewed dedication to local, sustainable practices. Our talented team shares a passion for ingredients and creating a dining experience like no other. In 2021 S&V moved locations to Uptown Waterloo, largely expanding their footprint in the city but sticking to their core values and their mission to provide the most excellent dining experience for guests through creative dishes, a one of a kind wine program & innovative cocktails.

Jill Sadler

Owner/ General Manager

Owner/Operator. Jill started out in the industry at 15 years of age, working in local establishments like Del Dentes & Red House. Graduating with a major in Criminology and minor in Contemporary Studies from Wilfrid Laurier she left hospitality briefly to pursue a career in social services. Her love for hospitality, craft cocktails and quality ingredients inevitably drew her back and she opened the original S&V Lancaster location in 2018. Since S&V's opening she has earned her CRT Certification and WSET Certification. She co-founded  Southwestern Ontario Bartending Community which aims to educate local hospitality individuals who lack access to hospitality information that is easily accessed when working in larger cities. She continues to work towards changing the culture of hospitality by providing a safe and inclusive space for guests and employees. Jill works closely with the LGBTQ+ community and acts as an advocate in our Region to create safe spaces. 


Mica Sadler

Owner

Mica Sadler is the owner of Sadler Real Estate Group.  He has grown up for most of his life in in the Kitchener-Waterloo region. After working in the sales sector for many local tech communities including Research in Motion & Magnet Forensics he decided that it was time to pursue his passion- Real Estate. Mica keeps the business side of our operation running smoothly, generally working hard behind the scenes to ensure our team can focus on all things food & beverage related. 

Aaron Hatchell

Head Bartender

Aaron has captured the hospitality world by storm with his attention to detail and ability to created beautiful works of art that can be seen in such publications as “Coming Home” & “The Art of the Garden”.

His love and passion for the craft cocktail scene pushed him to found the Southwestern Ontario Bartending Community, a group that educates local hospitality professionals and aids in the fostering of relationships among them.

Some of Aaron’s notable accomplishments include, World Class Finalist 2019, 2020, 2021, Bacardi Legacy Finalist 2019, Tales of the Cocktail Apprentice 2019, Tiki By the Sea Alum, CRT Certification, and WSET Certifications.

Krasimir Yanev

Krasimir Yanev

Head Chef

Krasimir began his culinary career in London, UK where he gained experience in various fine dining establishments. He then relocated to the Basque Country and continued his career in the city of San Sebastián Spain "the Culinary Capital of the World". There he started his family and held positions in kitchens such as Da Filippo Trattorio, holder of 2 Michelin Stars. After a few years he gained the position of Head Chef of Mirador de Ulía Restaurant holding 1 Michelin star and 2 Repsol Suns. During the pandemic he decided to open a catering company which expanded to the South of France prior to moving to Canada and starting his work here in Uptown Waterloo heading the kitchen of S&V.
